  • 4 large ripe peaches, halved and pitted
  • 1 tablespoon neutral oil (like avocado oil) or melted unsalted butter
  • 1 cup plain Greek yogurt (full-fat or 2% recommended)
  • 3 tablespoons honey (plus extra for drizzling)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons chopped walnuts or pistachios (optional for crunch)
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your outdoor grill or an indoor grill pan to medium-high heat. Ensure the grates are clean and lightly oiled to prevent the fruit from sticking.
  2. Wash the peaches and pat them dry. Cut them in half along the seam and remove the pits. Lightly brush the cut sides of the peaches with oil or melted butter to help with caramelization and prevent sticking.
  3. Place the peaches cut-side down on the hot grill. Close the lid and cook for 4 to 5 minutes without moving them. You are looking for distinct grill marks and for the flesh to soften slightly. Flip and cook for another 1 to 2 minutes on the skin side if desired.
  4. While the peaches are grilling, whisk together the Greek yogurt, honey, vanilla extract, and cinnamon in a small bowl until smooth and well combined.
  5. Remove the peaches from the grill and place two halves on each serving plate. Dollop a generous spoonful of the Greek yogurt mixture into the center of each peach half. Drizzle with a little more honey and sprinkle with chopped nuts and fresh mint if using.
